Originally made within the grounds of Jervaulx Abbey, this was a cheese much favoured by the French monks who settled in theYorkshire Dales hundreds of years ago.Their secrets of cheese making, perfected around 1150, have been passed down through the generations resulting in this delicately flavoured blue cheese. Unlike most of the other famous British blue cheeses, this has a softer, more rounded flavour and appearance.
Produced by Simon and Tim Jones on the edge of the Lincolnshire Wolds, Lincolnshire Poacher is an award-winning, artisan, unpasteurized cheese, made using milk from there own herd of Holstein cows. This hard cheese has a cylindrical shape and a granite-like rind. It is matured for 14 -16 months and has plenty of flavour, not unlike extra mature West Country cheddar.
Made with cows' milk, Langres is a washed rind cheese and is matured for 2 to 3 months in humid cellars (15 days to one month for the smaller Petit Langres) and receives regular washings of Champagne and annatto. Annatto, or 'rocou' in French, is an orange pigment taken from the Annatto tree. The cheese is sometimes washed in Marc de Bourgogne producing Langres au Marc. With a sticky brown-red to light brown rind is has a strong and penetrating bouquet. The paste is firm and supple and melts in the mouth, releasing a complex mixture of aromas. Further maturing produces a creamier texture and the flavour becomes pronounced with a spicy tang.
Produced by the Snowdonia Cheese Company in Wales this Red Leicester is laced with red chilies' and
cracked pepper for a subtle hint of warmth running through the cheese.
Made at the creamery in Trevarian near Newquay. Cornish Camembert has a delicious mild and creamy
flavour and a melting, smooth texture.Made using only milk from Guernsey cattle
which gives it its characteristic golden, buttery colour.
Extra matured goats milk cheese from North Cerney, Gloucestershire. This is a creamy ash coated truncated pyramid with a dazzling white paste, a light, moussey texture and a slightly salty taste.
The flavour is mild with a delicate lemony tang on the finish.
